Improvement of Bread-making Quality by the Addition of Betaine OAK

近年,機能性が注目されているベタインを一般的な加工食品に利用することを目的に,食パン生地にベタインを高配合したときの製パン性に与える影響を検討した.まず,食パンに,ベタインをパン生地の小麦粉に対して1∼5%添加したところ,生地からのガス発生量は,ベタイン添加量に依存して減少し,ホイロ時間が増加した.特に,機能性付与を目的とした5 %の配合では,製パン性は大きく劣化し,比容積は11%低下した.次に,食パンにベタインを高濃度に配合したときの影響を低減する方法として,ミキシング前に添加する方法に対して,ミキシング後半に添加した場合の食パンの物理特性や食感に及ぼす影響を詳細に調べた.その結果,ベタイン添加によるガス発生量およびガス保持性の低下は,ミキシング後半に添加することで大幅に改善し,比容積も有意に(p<0.05)改善した.ベタイン添加による比容積の低下は,クラムの硬さと高い負の相関がみられ,クラムの硬さが有意に(p<0.05)増加するとともに,クラストの硬さが低下したが,ベタインの添加をミキシング後半とすることで,ネガティブコントロールの硬さに近い値にまで改善された.これらの結果は,食感に関する官能評価の結果とも一致していた.走査型電子顕微鏡(SEM)による生地の組織像から,ベタインを高配合すると,ミキシングおよび発酵時にグルテンネットワークの形成が十分に形成できていないこと,ミキシング後半の添加とすることで,無添加の生地に近い状態に改善する様子が観察された.以上の結果から,食パンにベタインを高配合する場合は,添加時期を遅らせることで製パン性への影響を小さくできると考えられた.

Mathematical models to describe the volumetric shrinkage rate of red beans during drying REA

The present study aimed to determine the volumetric shrinkage rate of bean (Phaseolus vulgaris L.) seeds during air-drying under different conditions of air, temperature and relative humidity, and to adjust several mathematical models to the empiric values observed, and select the one that best represents the phenomenon. Six mathematical models were adjusted to the experimental values to represent the phenomenon. It was determined the degree of adjustment of each model from the value of the coefficient of determination, the behavior of the distribution of the residuals, and the magnitude of the average relative and estimated errors. การศึกษาคุณสมบัติทางกายภาพและเคมีของแป้งข้าวโพดบดหยาบดัดแปรด้วยกระบวนการเอกซ์ทรูชัน Thai Agricultural

Effect of particle size, feed moisture content and screw speed with different levels (250, 500 and 600 μm; 14, 16 and 18%; 300, 350 and 400 rpm) using a co-rotating twin screw extruder on physical and chemical properties (color, expansion ratio, bulk density, water absorption index (WAI), water solubility index (WSI), rheological and amylose/amylopectin content) of modified extruded products was investigated. Increasing feed moisture content results in extrudates with a higher bulk density, WAI and cold paste viscosity, but reduced the expansion ratio and WSI. Increasing particle size caused with a brighter color and higher amylose content. In case of higher screw speed increased the expansion ratio, WSI and amylopectin content.

Study on soil characteristics under different types of forest in Sakaerat Environmental Research Station Nakhon Ratchasima province was carried out on eight representative soils including an area of secondary mixed deciduous forest (Skr 1), two sites of dry dipterocarp forest (Skr-2, 3), an ecotone zone (Skr-4), three restoration dry evergreen forest (Skr-5, 6, 7) and an undisturbed dry evergreen forest (Skr-8). All soils located at upper part of middle footslope to upper part of lower footslope which were derived from colluvium over residuum of sandstone. Results revealed that soils under different forest covers are moderately shallow to very deep, which the one under dry dipterocarp forest (Skr-3) is the shallowest. Effect of modified corn grit flour by extrusion process on physical and chemical properties (Expansion ratio, Bulk density, Water absorption index, Water solubility index, Water binding capacity, Swelling power, Viscosity, Rheological and texture profile) in extruded products (Instant cereal beverage and snack foods) were studied with three factors of modified condition (Feed moisture, Screw speed and substitute). The results found that, water solubility index of instant beverage depended on %substitute (higher level will develop good solubility and viscosity).
